    Vegan Cinnamon Roll Pancakes

    Pancakes are a favorite here at the TCM household. I’ve always loved pancakes but being married to a pancake lover increased my own love two-fold. Pancakes are circles of deliciousness that you never want to end. When we went vegan, pancakes were one of the things that I was worried about.

    We love pancakes… but we have standards too

    I’ve tried a couple of different recipes none of which held up with the kids or the hubs–they were ok for me but I would take a green smoothie over them. Until now. As I was scouring through Pinterest for yet another pancake recipe to try, I came upon Vegan Yumminess. Her pictures of her pancakes looked divine and so I figured I would try them–except I didn’t have all the same ingredients and I don’t think pancakes should ever be made without vanilla extract.

    So I used her recipe as a skeleton for my own and VOILA! My own recipe was born!

    I’ve made a couple others since these but none have topped these right here. The hubs and the kids are literally begging for more after they’ve each devoured between 2-4 each–leaving me with my oh so delicious green smoothie. Yay. That was sarcasm.

    P.S. Insider tip – not so great with using a griddle and spatula? I normally use the Babycakes Flip-Over Pancake Maker. Works like a charm for making perfect pancakes every time!

    Why should non-vegans have all the fun?

    January marked the beginning of my adventures in veganhood and while I’ve loved it, seeing all these delicious recipes right before Super Bowl Sunday is making me miss dairy and meat!!! I don’t want to return to carnivore life–I’m enjoying my rabbit food–but I do still want some delicious snacks to be present for the party. Who knows? They might even be so good that the non-vegans will try their hand at it! And since my team isn’t even in the game, I’m really just going for the snacks ha!

    3 Ingredient Beer Battered Artichoke Hearts

    Naturally anything drenched in beer is welcome at a super bowl party!

    I wish I could eat this through the screen!!! These little bites of delicious are made by Jenn from Neurotic Mommy. She features “crazy healthy” recipes–beer is healthy people. In about 15 minutes, you can make these delicious little bites and be a big hit for making beer into a healthy and vegan recipe!

    Buffalo Cauliflower Bites and Cheater Vegan Ranch

    Anyone who knows mini and I knows that we LOVE buffalo wings. Like incredible amounts. And she loves ranch. But buffalo wings BELONG at Super Bowl parties. They are a staple–unless you’re vegan. Then these become the staple. Jenn over at Vegan Inspired has made these sooooo easy to make that mini just may be in the kitchen with me cooking them!

    Vegan Baked Jalapeno Poppers

    Yum.E. I love jalapeno poppers. These things are beyond delicious to me. Beyond. The baked in heat of the jalapeno coupled with the cool, gooeyness of the cheese just makes life right. And Marly from Namely Marly has made this possible for me! Pop up at the Super Bowl with these delicious poppers (see what I did there? ha!).

    Vegan Lasagna Bites

    When I saw that someone had created these I know that God loved me and my new vegan lifestyle. Bite sized lasagna??! This is ALMOST as good as not having to unwrap Snickers so I can eat them faster!!! Listen, I’m a work in progress ok? But Molly over at Quiche-A-Week is now bae because of this.

    Buffalo Quinoa Bites

    Be clear, these are being made. Again, I love buffalo anything and everything. And honestly, I like quinoa. It’s a balanced food–a grain with a protein personality and Betsy from betsylife gave these babies some style with the buffalo.

    How delicious do all of these look??!!? I cannot wait to make my contribution for the Super Bowl snack table!!!

     

    4 Must Try Desserts

    Yes, I know this is so the opposite of what I need to be paying attention to since I’m over here talking about how I look like the brown Baymax but whatevs.

    I was browsing around on StumbleUpon when I happened to stumble upon (see what I did there?) these delicious looking desserts! These are much better than the store bought versions since you have control of the ingredients. Check out some of these yummy treats that can be made by yourself or with your little one!

    I found these little tasty treats on Paint The Gown Red. After my donut craving last night, I’m pretty sure that these bites of deliciousness will be made soon!

    When I saw these, my mouth literally watered. I immediately thought that these would be super fun for abc’s 1st birthday party that’s coming up. Aww, Sam has shared the entire recipe on their site.

    Mini Donut Popsicles
    Aww, Sam has done it again. Instead of using the donut molds for actual donuts, she’s made popsicles. I can’t be the only who thinks this is genius!!!

    *checks scale* I’m pretty sure that I’ve gained 5lbs just looking at all this deliciousness but pineapple upside-down cake ice cream!?!?!? Oh.Em.Gee! Let’s Mingle has shared this glorious recipe on their site.

    I wish I could take credit of having an inventive mind like this when it came to designing desserts but then my never-ending battle with weight would really never end. But I will take credit for sharing them with you!

    Lunch To Go: Peaches N’ Nana Smoothie

    Yesterday I did some quality meal prep but today I’m heading school shopping with my bestie. Normally I would just leave lunch home and grab something while I’m out. Given my lifestyle changes, that’s really not an option so I whipped up a delicious and healthy smoothie!

      
    What’s in this deliciousness?

    Peaches N’ Nana Smoothie

    • 1 banana
    • 1 4oz jar baby food peaches
    • 1 scoop vanilla protein
    • 1 tablespoon chia seed mix
    • 8oz cold vanilla almond milk
    • 1 handful ice

    Blend and enjoy!

    Recipe: Quick Pressure Cooker Chicken Cacciatore

    Since I’ve made my first meal in my pressure cooker, I haven’t stopped using it. I LOVE this thing.

    As I’m working on losing weight and returning to healthy eating, I’m trying to make sure that my recipes are in line with my goals. This recipe is super easy and delicious–everyone certainly enjoyed this dinner. When I buy my meat, I split it up into freezer bags so I started out with frozen chicken.
