Kielbasa is a kid favorite dinner staple in my house. Personally, my favorite dinners are meals that everything is available in my pantry. My second favorite meals are one pot meals. Less dishes. That is why this one pot kielbasa dinner is a sure-fire dinner win for everyone!
For this dinner, I knew I had a ton of kielbasa in my deep freezer so I needed to use it. The problem was that I needed a new recipe because I was tired of my old go-to’s. So I searched through my refrigerator to see what had to be used and found all my ingredients! This one pot kielbasa recipe was now added as a family favorite!
Get All Your Veggies In – and the Kielbasa!
This recipe is awesome because you can incorporate whatever vegetables you want. I know that it will still turn out awesome even if you veer off of this recipe. I happened to have green peppers, onions, and potatoes. So I chopped them up. If I would’ve had mushrooms, I probably would’ve thrown those in too. You could totally do different kinds of peppers, maybe some tomatoes, or zucchini and squash would be good too!
It All Goes in One Pot
I love putting everything together in one pot. Simply because it all cooks together and I know it will blend nicely. I basically did a messy, chunky chop of the potatoes into nice, bite-sized pieces and let those crisp up a little in some hot EVOO. I then added in the chunky onions and green peppers. Finally I added in the kielbasa as it was already pre-cooked and truly just needed heated through. I stirred it up, seasoned it a bit with some season salt and BAM! Dinner was served.
Every Meal Doesn’t Need to be Fancy
One pot dinners are a go-to in my household. I like a good casserole too! But these meals seem to always go over well with my kids and husband, and I enjoy them too. And just because you don’t have three separate blobs of your food on your plate doesn’t mean it won’t be a good meal. Trust me, cereal is sometimes the BEST meal.
One Pot Kielbasa Hash
One pot kielbasa hash is a meal that can incorporate pantry ingredients. No running to the grocery store for this dinner.
- 1 package Kielbasa I used kielbasa that was pre-cooked and from our own family farm
- 2 Green peppers
- 1 Onion
- 3 Potatoes Peeled
- 1 tbsp Olive oil extra virgin
- Season salt to taste
Heat oil in large skillet over medium-high heat. I used my cast iron skillet but you can use any heavy skillet.
Chop the potatoes into small chunks and lightly fry them in the oil (about 5-7 minutes). You can season as you prefer.
While the potatoes are frying, chop the onions and green peppers into large chunks. Add those to the potatoes and fry for 2-3 minutes.
Chop the kielbasa into 1/4 rounds and add them to the skillet. Cook until heated through.
Season all ingredients with season salt.
Serve hot. Enjoy!
