Growing up in New York, pizza was my favorite food. Not much has changed now that I’m an old(er) lady with a well-defined palate. One of my favorite pizzas is just your traditional, basic Margherita pizza with tomatoes, basil, and fresh mozzarella. There’s something about the simplicity of this pizza that just comforts me.
Pizza Is For Sharing!
Whether store-bought or homemade, pizza is the perfect dish to share. It’s great on its own as the star of the show but goes great with salads as well. My favorite thing? Depending on how adventurous you are, pizza can be a breakfast, brunch, lunch or dinner meal. For this recipe, I thought it would be fun to give the Margherita a makeover that is ideal for a summer brunch!Jump to Recipe
While the toppings for Margherita pizza are pretty standard–tomato, basil, mozzarella–I decided I wanted to switch things up and make it easier. While I love having really fresh and delicious food, my reality is that as a mom who’s balancing a lot at once, sometimes those fresh ingredients go bad. This is the very reason why I always keep canned tomatoes in my pantry. I recommend using Red Gold Tomatoes diced tomatoes for this recipe.

Last year I can’t tell you how many fresh fruits and veggies I ended up tossing because I never got around to using them. In order to make this brunch-friendly, I’m adding scrambled eggs in between the layers of sauce, cheese, and the tomatoes. True-story: I thought that eggs and tomatoes were gross until I finally tried them my senior year in college. Now, I look for any excuse to eat the combination!
The Ultimate Breakfast Margherita Pizza
Brunch is one of the best meals of the day. Surprise the pizza lover in your crew with this delicious take on a traditional Margherita pizza!
- 1 Thin Pizza Crust
- 1 Can Red Gold Diced Tomatoes
- Fresh Mozzarella
- Pizza Sauce
- 4 eggs
- Shredded Mozzarella
- Butter unsalted
- Salt & Pepper
- Pre-heat oven to 350 degrees.
- Crack eggs into bowl and add 2 tablespoons of milk and beat. Season with salt and pepper.
- Heat butter over skillet and scramble eggs softly before removing from heat.
- Open can of Red Gold Tomatoes and drain liquid.
- Spread pizza sauce on pizza crust.
- Add a layer of mozzarella cheese.
- Spread the eggs over the cheese.
- Place the diced tomatoes and mozzarella over the eggs.
- Put in the oven and cook until cheese is melted–about 10 minutes.
- Let cool for 5 minutes before cutting and enjoying with your loved ones!
